Fatthead Pizza

Recipe below is for 1 pizza, that I cut into 6 pieces -- 2 of which fill me up nicely.

Steps:

  1. Set up parchment paper on your baking sheet. Set aside.
  2. Combine mozz cheese and cream cheese into the mixing bowl. Better to slit up the cream cheese into smaller dollops.
  3. Put cheese into microwave for 1 minute. Mix using spoon. Put back into microwave for another 30 seconds. Mix again.
  4. Add egg and almond flour into cheese mix.
  5. As it has likely cooled down, and is stringy, put the "dough" back into the microwave for another 20 seconds. Briefly mix again.
  6. Wet hands with water, then evenly spread the dough onto parchment paper (on the cookie sheet).
  7. Dock it. Dock the hell out of it (use the fork to poke holes in the top of the dough, over and over again -- this helps prevent air bubbles).
  8. Sprinkle italian seasoning over top of dough. Be generous, to taste.
  9. Put pizza dough into oven at 425 deg F.
  10. Bake for 7 minutes. Pull out. Dock again, if any air bubbles have formed. Bake again for another 5 minutes (or slightly longer, until pizza dough is golden brown). While cooking, prepare any toppings that need to be prepared, like slicing your green olives. if you're adding ground beef (or something that needs to actually cook), cook it now, as when the pizza goes back into the oven, it's just long enough to melt the cheese.
  11. Pull out. Spread garlic spread over hot pizza crust. (Skip if you drink blood ) see image 5
  12. Spread pizza sauce evenly over 95% of the pizza crust.
  13. Place shredded cheese to cover sauce.
  14. Add prepared toppings. see image 6
  15. Add a bit more shredded cheese to cover toppings and hold in place. Maybe try a different cheese, like a nice sharp yellow Old Cheddar? see image 7
  16. Sprinkle a touch more italian seasoning over top.
  17. Put pizza into oven at about 350 deg F.
  18. Bake for at least 7 minutes, but check after 5 minutes, as all we're doing here is melting the cheese until it's pizza consistency. Crust will darken and crisp up a bit.
  19. Remove from oven, cut into 6 pieces. see image 8
  20. Serve two pieces per person on plates.
